4 cups dry lentils
2 cups rice
1.5 lb yellow onion, sliced thin
3 tsp salt
1/2 cup EVOO
for carmelized onions:
4lb yellow onion
1 cup vegetable oil
Fry all the onions in vegetable oil until they are dark brown. Don’t touch them at all after they are frying until they have reached the golden brown color, and then immediately remove them from the oil and put them aside.
While the onions are frying, rinse the lentils. Place them into 6 cups boiling water with the rice. Add to the pot 1 cup of the fried onions. Let the rice and lentils cook until all the water is gone.
Place the rice into a serving dish (will make about 15 servings) and top it with the remaining caramelized onions.
